Appetizers Recipes - Omelettes
Small omelette

Ingredients for 4 servings:
5 eggs 5 anchovy fillets 2 red tomatoes 3 tbs olive oil Minced parsley 1 clove garlic Red hot pepper powder Salt
Preparation:
Mince together anchovies and parsley. In a pan, smash garlic and fry lightly with 1 tbs oil. When brown take garlic out. Pit and peel tomatoes, cut in small pieces.
Pour anchovies mixture in the pan and add tomatoes, a pinch salt and red hot pepper.
Cook using medium heat for few minutes. Pour sauce in a medium bowl to cool down.
Beat eggs, add salt and combine with tomato sauce.
In a large pan, heat 2 tbs oil, when warm pour in eggs mixture and cook both sides.
Serve warm on a plate, cut in cloves or sticks.
