Green "bagnet"

Ingredients for 4 servings:
2 salted anchovies
1 boiled yolk egg
6 tbs minced parsley
1 minced clove garlic
1 tbs capers
1 hand breadcrumb
Milk
olive oil
salt and pepper

Preparation:
There are several opinions about ingredients for this sauce.

Some cook doesn’t use egg and capers.

Some other adds minced onion or red hot pepper or pickled cucumber and melon juice.

This is the basic recipe.

Wash, rinse and dress anchovies, mince well with boiled yolk egg.

Add parsley, garlic, capers and breadcrumb (previously dipped into milk and squeezed).

Beat well to obtain a uniform mixture.

Pour in a medium mixing bowl and add a tbs oil. Keep stirring till sauce is liquid.

Season with salt and pepper.

Use this green sauce to season boiled meat or fish.
