First course Recipes - Cold dishes
Panzanella

Ingredients for 4 servings:
400gr tuscan stale bread
Some leaves basil
6 fresh tomatoes
2 big onions
Olive oil
Salt and pepper

Preparation:
Chop bread and dip it in water for some minutes.

As soon as it’s soaked, squeeze with a dishtowel and crumble in a medium-mixing bowl.

Season bread with oil, salt, pepper and mix all. Add minced tomatoes, minced basil and thinly sliced onion.

Stir well and set aside for 20 minutes before serving.
