Ingredients for 4 servings:
500gr black cabbage
500gr white cabbage
500gr white beans
100gr olive oil
2 onions
10 carrots
2 leeks
1 stalk celery
Some fresh tomatoes
Parsley, basil
Some slice stale bread
Meat broth
Skin ham
Salt
Pepper
Preparation:
In a medium pan boil beans. If beans are dry soak for 8/10 hours before cooking. In another medium pan pour oil and add chopped black and white cabbage.
Mince carrots, onions, leeks, parsley and tomatoes, chop celery, and break basil. Add all these vegetables to cabbages.
Finally, add skin ham, salt, pepper and let cook using low heat.
When beans are ready, sieve half of quantity and pour in vegetables pan.
Let evaporate some cooking water of whole beans and add all in vegetable pan.
Cook using low heat, stir and add meat broth from time to time.
Arrange bread slices to cover the bottom of a serving bowl. When supper is ready, pour in the serving bowl and set aside, let bread absorb liquid part of supper.
Season with olive oil and serve.
