Ingredients for 4 servings:
8 1cm thick slices home made bread or French bread
4 eggs
1/2kg mozzarella (better if bufala mozzarella), cut in 1/2cm thick slices
Oil to fry
1 glass milk
Few flour
Salt and pepper
Preparation:
Using a sharp knife cut bread crust, moisten 4 bread slices with milk and arrange them over a chopping board.
Place over each slice one or two mozzarella slices, mozzarella should not come out bread edges.
Moisten with milk remaining 4 bread slices and cover mozzarella.
Flour mozzarella sandwiches, dip fast in beat eggs, add salt and pepper.
In a medium pan heat oil, fry mozzarella sandwiches till surface is gold. Dry with paper towel and serve very hot.
