Main dishes Recipes - White meat
Roast baby lamb

Ingredients for 4 servings:
1kg baby lamb round
1tbs lard
1/2 glass vinaigrette
3 anchovies
Flour
Garlic
Rosemary
Sage
Salt and pepper

Preparation:
Dice baby lamb, wash and drain it.

Brown meat with lard using high heat, add salt, pepper, mince of garlic, rosemary and sage.

Pour 1/2 glass vinaigrette and 1/2 glass water.

Simmer meat for 45 minutes using medium heat, turn gently to avoid meat sticks.

In the meantime, in a small pan mash anchovies with some baby lamb sauce and stir till sauce is uniform. Add this sauce to meat till end of cook.
