Ingredients for 4 servings:
250gr aubergines 250gr potatoes 250gr peppers 200gr peeled tomatoes 1 clove garlic Salt
Preparation:
Wash and slice aubergines, arrange over a plate sprinkled with salt. Set aside for one hour.
Wash well aubergine slices, dry with paper towel and fry in hot oil. Dice potatoes, slice in sticks peppers and fry all in hot oil
Drain fried food with paper towel and arrange on a pan together with diced tomatoes and garlic. Salt and cook for one hour.
