Gnocco fritto

Ingredients for 4 servings:
250gr all-purposes white flour 15gr active dry yeast 20gr lard or olive oil 1 tsp salt 125gr luke-warm water Lard or frying oil
Preparation:
Sieve flour over a wooden table in form of a small mountain, make a hole in the middle and pour into the hole salt, lard and melted yeast (melt yeast in half glass lukewarm water). Knead well till dough is uniform in colour, is smooth and elastic.
Cover and let rise in a warm place for 1 hour. Roll the dough into a 3-4mm high rectangle.
Cut dough into rhombus and fry in boiling oil or lard, cook few pieces per time.
Dry with a paper towel and serve “gnocchi” very warm.
