Potentina meat sauce

Ingredients for 4 servings:
600gr pork meat (only one slice)
70gr slices of smoked bacon
500gr fresh tomatoes
25gr grained sheep’s milk cheese
25gr minced sheep’s milk cheese
50gr lard
Dry white wine
Olive oil
Parsley
1 clove garlic
Red hot pepper powder
Nutmeg
Salt

Preparation:
In a small-mixing bowl mix minced persley, garlic, a pinch of red hot pepper, nutmeg and minced sheet’s milk cheese.

Beat well meat slice till flat, sproud with herbs, stretch bacon slice, roll on and bind as a big roulade.

Brown roulade in lard and oil, baste with wine from time to time. Pit and peel tomatoes, cut in small pieces.

When meat is brown, pour in tomatoes, add salt and cook with low heat for 2 hours.

When ready, place roulade on a platter, keep warm aside and serve as main dish. Sieve tomatoes sauce, use this sauce to dress fresh pasta, better if home made pasta.
