Ingredients for 4 servings:
1/2 kg peeled tomatoes
1 red hot pepper
1 small sliced onion
2 cloves garlic
Parsley, few mint leaves, minced celery
5 tbs olive oil
Salt
Preparation:
In a medium-pan combine olive oil, tomatoes, pit pepper, onion, garlic and minced herbs.
Add salt and boil, using high heat, for 1/2 hour, stir and chop tomatoes with a fork.
When ready take out red hot pepper and garlic. Use this sauce over home made maccheroni (better if maccheroni alla chitarra).
