Ingredients:
3 posies basil (better if with small leaves)
1/2 glass olive oil
70gr grated Roman cheese
70gr grated parmesan
50gr pine nut
1 clove garlic (optional)
Preparation:
Wash and rinse basil, dry well. Place basil in a pestle and crush with garlic, a pinch of salt.
Keep crushing and add grated cheeses and pine nuts.
When mixture is uniform pour small small oil.
When pasta is ready, water down with pasta cooking water.
To prepare pesto more rapidly, use a food processor combining ingredients all at once.
