Ingredient for 6 servings:
500gr fresh pork rind
200gr lard
2 cloves garlic
Red hot pepper
Parsley
Salt
Tomato sauce
Lentils or home made pasta
Preparation:
Cut pork rind in shape of square with 7cm side. Scrape it, wash and boil for 10 minutes.
Mince lard, garlic, red hot pepper and parsley.
Pour the mixture in a pan, brown with 1 tbs lard.
Pour over rind, season with salt, roll it up and fix with a toothpick.
In a medium-pan, pour tomato sauce, add rind rolls and let cook for 2 hours using very low heat.
Use this sauce and rolls to season home made pasta, or serve as main dish with lentils.
