Vegetable stew

Ingredients for 4 servings:
800gr potatoes 1kg broad beans 6 artichokes 400gr onions 150gr bacon olive oil salt
Preparation:
In a medium pan sear sliced bacon with oil.
Wash artichokes, take away tops and harder leaves, slice in cloves. Before bacon is brown, add sliced onions and sear a bit. Then add shelled broad beans, peeled and diced potatoes and artichokes.
Season with salt and mix well. Lid up and stew for 1 hour using low heat, if necessary add few warm water.
