Dumpling (Strangolapreti)

Ingredients for 4 servings:
350gr white flour 1/2lt milk Salt
Preparation:
Heat milk till boiling with salt, take away from heat and pour flour like a rain. Stir well and pour mixture over a wooden table, knead immediately until warm.
Dough must be smooth and firm. With dough make sticks as big as a finger, cut in small pieces, pour into flour and press gently with thumb finger to make a small dimple. Boil in abundat boiling and salted water. Initially dumplings will float, when sink then drain.
Serve with ragù sauce and grated sheep’s milk cheese.
