First course Recipes - Dried pasta
Stockfish bucatini

Ingredients for 4 servings:
1kg stockfish, dried cod (sponged Stocco di Mammola)
350gr bucatini (big spaghetti)
500gr peeled tomatoes
Onion
garlic
Red hot pepper
parsley

Preparation:
Using preferably an earthenware pan, sear minced onion and garlic.

Add chopped stockfish and cook for a while.
Take out from heat and set aside. Add tomatoes and minced red hot pepper.
Cook sauce and when almost ready combine with stockfish and cook for 5 minutes. Season with minced parsley.

In the meanwhile, cook bucatini in abundant salted water.
Drain when tender but firm and dress using only tomato sauce. Stockfish will be served as main dish.
