First course Recipes - Stuffed pasta
Casônsèi (ravioli)

Ingredients for 4 servings:
-for dough
300gr white flour
3 eggs
Salt

-for stuffing
100gr sausage
30gr bread crumb
50gr grated parmesan cheese
Milk

- for dressing
100gr butter
50gr grated parmesan cheese

Preparation:
Dip bread crumb in milk, squeeze well. In a medium-mixing bowl chop sausage, bread crumb and add grated cheese. Combine ingredients till mixture is uniform.

Knead flour, eggs and salt, dough must be smooth. Roll a thinly sheet.

To prepare casonsei cut dough sheet in shapes of 8cmx10cm rectangles. Fold dough rectangles in half over filling, seal edges by pressing with fingertips. Finally, bend ravioli in shape of half-moon.

Cook for some minutes in salted and boiling water, drain and serve dressed with melted butter and grated parmesan cheese.
