First course Recipes - Dried pasta
Summer beans salad

Ingredients:
500gr fresh beans
100gr short pasta
1 onion
100gr fresh tomatoes
1/2 glass olive oil
Basil
parsley
Celery
Salt

Preparation:
Slice onion and sear with oil for some minutes.
Blanch and peel tomatoes, minced and place in a medium pan.
Cook tomatoes for a while and add fresh beans, keep more tender pods.
Stir and cook for 30 minutes.

Pour water into pan and cover beans.
Add basil, minced parsley and celery, season with salt and cook.
In the same pan, pour pasta and cook till tender. Stir from time to time.
