First course Recipes - Rice
"Jumping" rice

Ingredients for 6 servings:
600gr rice arborio kind 100gr butter 50gr beef marrow 1 small onion 80gr grated parmesan 150dl hot meat broth One pinch saffron
Preparation:
To prepare "jumping" rice use remaining saffron rice or precooked one.
Place rice between two oven paper sheets and press well by hands giving shape of a small cake.
In a medium-pan melt butter, take away one sheet paper and pour the small cake into pan.
Take away second sheet.
Don’t touch rice; let it cook till surface is crunchy.
Using another plate, turn up side down rice in the pan and add other butter, let cook till both sides are brown.
Cover with grated parmesan and serve.
