First course Recipes - Rice
Rice with "fonduta"

Ingredients for 4 servings:
400gr rice 50gr butter Fonduta as needed
- For Fonduta: 400gr fontina cheese 40gr butter 2dl milk 4 egg yolks Salt
Preparation:
Fonduta preparation: In a medium-mixing bowl dip fontina cheese in milk, soak for 3 hours. Drain and add to melted butter in a small pan. Stir well using low heat till mixture is creamy but not stringy Finally add beaten eggs and salt, mix well.
Boil rice till tender but firm. Drain rice and pour in a high baking-pan with central hole. Turn pan upside down over a warm serving-plate and pull out of shape. Pour over fonduta and serve immediately.
