First course Recipes - Rice
Rice with sausage

Ingredients for 6 servings:
600gr rice
1lt few salted water
300gr sausage from Mantova
70gr butter
80gr parmesan cheese

Preparation:
In a medium-pan with high bottom boil water. Using a sheet of paper bent as a cone pour rice in the middle of pan making a little mountain which top must be out of water.
If necessary use a deeper to take some water out.

Boil for 7 minutes since water boils and take pan away from heat, lid up and cover with a dishcloth for 15 minutes.

In this way rice cook for the right time.

In the meanwhile peel sausage and sear with butter pressing it with fork tips. When rice is ready pour sausage sauce and stir with parmesan cheese. Serve immediately.
