Ingredients for 4 servings:
400gr white flour 1/2 tbs lard fresh tomato sauce grated roman cheese salt water
Preparation:
In a medium-mixing bowl combine flour, salt, lard and enough water to prepare a firm dough. Knead with energy for 30 minutes.
Roll a thin sheet and with the right tool (similar to the one used to prepare maccheroni alla chiatarra abruzzesi), prepare small squares of dough. Boil in salted water for 5 minutes.
Season strascinati with tomato sauce and serve with abundant grated roman cheese.
