First course Recipes - Dried pasta
Pasta with egg and potato

Ingredients for 4 servings:
300gr short pasta 4 eggs 4 small potatoes 50gr grated roman cheese 2 fresh sausages minced parsley olive oil Pepper salt
Preparation:
Wash potatoes using warm water, don’t peel them but chop and fry in olive oil.
Season with salt and set aside.
Beat eggs with grated roman cheese, little parsley and set aside.
In a medium pan cook minced sausages using medium heat, stir continuously with a wooden cookware, when ready set aside.
In a big pan, in abundant salted water boil pasta, drain when firm.
Combine with all ingredients in the same pan of fried potatoes: little fry oil, pasta, potatoes, sausage and beaten eggs.
Add one pinch pepper ready grinned, stir till firm and serve immediately.
