Ingredients for 4 servings:
300gr stale white bread
350gr boiled spinach
2 eggs
Milk
100gr butter
2 tbs flour
2 tbs grated bread
Salt
Pepper
Nutmeg
1 clove garlic
1 small minced onion
Grated parmesan cheese
Preparation:
In a medium-mixing bowl pour milk and dip diced bread.
Squeeze well spinach to take out cooking water, mince and light fry in a medium pan with onion, garlic and butter.
Let cook for few minutes and combine with bread.
Add eggs, salt, pepper and nutmeg, flour and grated bread.
Knead well by hands and prepare balls big like peaches. Boil abundant water, add salt and reduce heat. When water is right a bit under boiling temperature pour bread balls. Cook for 10/15 minutes, using low heat.
Drain gently and serve with melt butter and grated parmesan cheese.
