First course Recipes - Potatoes dumplings
Bread balls with smoked ham

Ingredients for 4 servings:
300gr stale white bread 100gr smoked ham 2 eggs Milk Butter 1 small onion Flour Minced parsley Chives Meat broth Salt
Preparation:
In a medium-mixing pan combine diced bread and diced smoked ham. Beat eggs with little milk, add parsley and combine with bread and ham.
Set aside for 30 minutes at least. Slice thinly onion and fry lightly with butter and flour. Add onion to bread and ham.
Stir well all ingredients. If necessary, add some milk. With wet hands, prepare 8 balls choosing uniform ingredients.
Pour bread balls in boiling water (better if right a bit lower temperature such as water doesn’t really boil) and cook for 15 minutes.
If bread balls break during cook add some flour to mixture. For this reason cook one first ball and observe how it cooks.
When bread balls are ready, take them out of water gently and arrange 2 per 2 in individual soup plates, cover with warm broth and chives.
