Ingredients for 4 servings:
1kg white onions
1,5lt meat broth
100gr butter
120gr grated groviera or fontina cheese
French sort steal bread
1tbs white flour
Salt and pepper
Preparation:
Slice onions, pour in a medium-mixing bowl and add to melted butter. Lid up and cook using low heat, mix often, onions should not become too brown.
After 30 minutes, dust with one tbs flour and add hot broth, continue to stir.
Cook till onions are melted, add remaining broth and continue to cook to reduce a bit.
In the meantime, slice bread and dust with grated parmesan, let bake in hot oven till cheese is melted.
Arrange in a big serving-bowl or in 4 small serving-bowls some of bread slices and cover with onion soup. Serving bowls must be oven adapted.
Cover with remaining bread and cheese, set big serving bowl or small serving bowls in hot oven and let surface became crispy.
When surface is crispy and brown serve immediately.
