Ingredients for 4 servings:
300gr dry red beans
2 potatoes
300gr broccoli
100gr small pasta like ditali pasta
1 pork skin
1/2 glass olive oil
Celery
Fennel seeds
garlic
Salt
Preparation:
Let beans in water for one night.
In a medium pot, better if an earthenware one, combine one big piece of garlic, celery, some fennel seeds and abundant water, let boil for 2 hours.
Add diced pork skin, peeled and diced potatoes, season with oil.
After 30 minutes, add broccoli and let cook for 15 minutes. Finally cook pasta in same pot.
Stir often and, if necessary, add some hot water.
When cooked, pour in individual dishes and set aside for 5 minutes.
Serve with olive oil.
