Ingredients for 8 servings:
-for pasta
400gr flour
2 whole eggs
water
- for stuffing
250gr braised meat and its sauce
150gr grated bread
2 eggs
8tbs grated parmesan cheese
Nutmeg
Salt
Broth
Preparation:
In a medium pan, warm some braised meat sauce, add grated bread and stir well. Take away from heat; add very thinly minced braised meat, cheese, eggs, nutmeg and salt.
Mix well till mixture is uniform.
Prepare dough combining flour, eggs, enough water and roll a thinly sheet.
Place stuffing over sheet in small balls at a distance of 5cm. Fold dough over filling.
Seal edges by pressing with a small dough-cutter. Anolini should have shape of small moons.
Cook anolini in boiling broth and serve with grated parmesan cheese.
