Main dishes Recipes - Roast and meatloaf
Pork arista

Ingredients for 6 servings:
1,5kg top loin roast
3 cloves garlic
3 small rosemary branches
Salt and pepper

Preparation:
Before cook prepare roast: using a sharp knife cut gently meat almost to the bone (chop should not detach), than tie the roast with cooking rope.

Mince garlic with rosemary leaves, salt and pepper.

Cut meat, work knife inside keeping the original slit small, carefully push some of garlic mince in.

Spread with salt and pepper entire roast surface. Place roast in a greased (with oil) shallow roasting pan and roast in preheated oven at 180°C temperature for 2 hours.

Turn from time to time and spoon some cooking grease over roast.
Slice and serve immediately when still warm or cool (do not reheat).
