Ingredients for 6 servings:
1,5kg short loin beef
Some carrots
Two stalks celery
1 big onion
1 clove garlic
50gr bacon
3 cloves
30gr butter
1 glass red wine
Salt
Preparation:
Roll meat with bacon and garlic, arrange it in a pan together with all legumes (washed and drained), butter, cloves and red wine.
Salt and simmer for hours using very low heat.
Cover the pan and close it very well, if necessary put a weight to keep the lid close.
When cooked slice meat and serve covered with sauce and diced vegetables. If preferred sieve sauce and vegetables and pour this mixture over meat.
Stew is much more delightful if consumed the day after cooking, as tradition says.
Serve together with cornmeal porridge or creamed potatoes.
