Valdostana rib chops

Ingredients for 4 servings:
4 veal rib chops with bone 100gr fontina cheese 100gr butter 1 egg Enough flour Bread crumbs Salt and pepper
Preparation:
Using a sharp knife cut orizontally chops, meat should not detach from bone.
Open two strips and fill with fontina cheese slices, pepper and salt. Close strips and pound with a meat pounder to fold edges.
Flour filled rib chops, dip in beat egg, and sprinkle with bread crumbs. Fry in hot butter. Turn chop to brown both sides, fry till fontina cheese is melted and chop surface is gold.
Serve immediately still hot. You can serve Valdostana rib chops with truffle slices.
