Milan rib chops

Ingredients for 4 servings:
4 veal rib chops 100gr butter 2 eggs 1 lemon Bread crumbs and salt
Preparation:
Using a sharp knife cut the external white pellicle to avoid meat curls during cook. Pound gently with a meat pounder.
Dip rib chops in beat eggs, coat with abundant bread crumbs In a big pan melt butter, as soon as butter is gold fry rib chops.
Cook both sides for few minutes using high heat till surface became crusty (turn chops very gently using a slice to avoid to broke crusty surface)
Lower heat and simmer for few minutes more till meat is tender. Sprinkle with salt and serve together with lemon slices.
Milan rib chops are delightful served cold with a sauce made with oil, anchovies paste and lemon juice.
