Main dishes Recipes - White meat
Bracioletti riggitani

Ingredients for 4 servings:
500gr veal round, cut in thin slices
50gr grated roman cheese
Bread crumbs
1tbs lard
Minced parsley and garlic
Smocked bacon or lard slices
Olive oil
Black pepper and salt

Preparation:
In a medium mixing bowl combine bread crumbs, grated roman cheese, mince garlic, minced parsley, salt, pepper, few oil and stir very well.

Spread one tbs of herbs mixture over meat slices, roll it up and close well lateral edges. Stick meat rolls with metal spit alternatively with a smocked bacon slice or lard slices

Grease all with few lard and arrange over a rack. Broil for 5 to 10 minutes.
Serve immediately.
