Ingredients for 4 servings:
1kg lamb shoulder
300gr potatoes
80gr lard
80gr tomato sauce
1/2 onion
1 stalk celery
1 small carrot
1 clove garlic
1 tbs oil
1 glass dry white wine
Marjoram
Hot pepper powder
Salt
Preparation:
In a medium pan, better if an earthenware one, warm oil and add diced lamb. Brown all.
Sear well turning meat often.
Take away from pan and set aside.
Prepare a mince with lard, carrot, onion, celery, marjoram and add to meat cooking sauce.
Sear mince, add wine and let evaporate using high heat.
Add tomato sauce, hot pepper, salt and cook for 15 minute using low heat.
Take lamb and arrange it in previous pan, simmer.
In the meanwhile boil potatoes, previously peeled and cubed, stop at half of cook and add to lamb.
Finish to cook and serve immediately.
