Ingredients for 6 servings:
2kg kid 800gr peas 5 eggs 1 lemon 1 thick minced onion 50gr grated parmesan cheese Olive oil 1 small glass brandy or cognac Thin minced parsley Salt and pepper
Preparation:
In a medium pan sear onion with oil, add cubed kid (previously washed and drained).
Brown gently, reduce heat and pour one or two hot water deeper, brandy or cognac small glass, salt and pepper
Boil peas in abundant salted water, drain and pour in lamb pan. In a medium mixing bowl beat eggs with cheese, minced parsley, salt and pepper. Pour egg mixture in pan and stir fast raising heat till eggs became yellow and uniform.
Spread with lemon juice and serve warm.
