Ingredients:
1/2 baby kid
3 pepper “bisciuluni” or “Napoli”
250gr peeled tomatoes
2 onions
8 potatoes
2 glasses red wine
bacon
Red hot pepper from Calabria
4tbs lard
celery
rosemary
parsley
salt
Preparation:
Cube kid and arrange it in a capacious oven pan. Over a chopping board beat bacon and parsley using a big knife.
Dice peppers and onions, peel potatoes and combine all: kid, onion, peppers, tomatoes, bacon, celery, rosemary, hot pepper, sieve with lard and salt.
Add red wine and bake in 180°C oven till meat results tender.
Instead of lard you can use oil but taste and tradition change.
