Main dishes Recipes - White meat
Termana pork

Ingredients for 4 servings:
1kg fresh pork (muzzle, feet, skin, ears, ribs).
2 leaves bay
2 cloves garlic
1 pitted hot pepper
1 small branch rosemary, with fixed leaves.
Sliced home made bread
Vinaigrette
Salt

Preparation:
In a medium mixing bowl, dip meat in some tbs vinigrete for 12 hours.
Drain, dice meat and arrange it in a medium pan with bay, garlic, hot pepper and rosemary.

Cover with water, add salt and simmer using low hat.
Cook covered for 4 ahours.

Serve meat slices with bread slices and with few broth. At end of cooking broth should results reduced and pretty glutinous.

You can serve this kind of meat also cold with jelly broth.
