Aubergines rolls

Ingredients for 4 servings:
500gr oblong aubergines Bread crumbs Grated roman cheese Minced parsley Salted capers 3 minced cloves garlic Olive oil Salt
Preparation:
Peel aubergines, slice thin in length. Press slices for 1 hour. Combine bread crumbs, parsley, garlic, washed capers, roman cheese and some drops oil.
Wash and dry aubergines and arrange them over a chopping board. Pour few oil over each slice and cover with bread crumbs mixture.
Rolls them up and fix with a metal spit. Arrange spits over a rack and sprinkle with some more drops of oil.
Broil turning from time to time, using very low heat. Serve warm.
