Beans with pigskin

Ingredients for 4 servings:
500gr fresh pigskin 300gr dry beans Tomato sauce 50gr butter Olive oil Carrots, celery, onions 1 clove garlic Pepper and salt
Preparation:
Dip dry beans in abundant water and set aside for one night. In a medium pan pour cold water, boil beans, add salt at almost end of cook.
Burn pigskin, brush and wash them well. In a medium pan pour cold water, pigskin, celery, onion, garlic, and boil.
When beans and pigskin are cooked, in a medium pan brown butter with few oil, minced carrot celery and onion, one pinch minced pepper.
Add to herbs pan drained beans and sliced pigskin, some tomato sauce and greaseless pigskin broth.
Simmer for 30 minutes, add salt and pepper if necessary. Serve warm.
