Ingredients for 6/8 servings:
1,300kg veal paunch
5 eggs
150gr veal sweet-bread
30gr butter
150gr veal brain
200gr chicken meat
1 slice marinated tongue
Grated parmesan cheese
Basil
Parsley
Carrots
Garlic
Salt and pepper
Preparation:
Boil sweet-bread, veal brain and chicken meat, than mince all.
Add 2 fresh eggs, 2tbs grated parmesan cheese, minced parsley, basil, garlic, salt and pepper.
Mix well all ingredients.
Cut veal paunch and form a kind of bag, to be filled with previous mixture and boiled carrots, 2/3 boiled eggs, diced marinated tongue.
Sew paunch bag opening and brown this “cima” with hot butter for 15 minutes, using a large pan.
Than place this pan in oven and cook for 2 hours.
when cooked place “cima” on a chopping board and press with some weight.
Let cool, cut thin slices and serve with vegetables.
