Main dishes Recipes - White meat
Fricassea of sweet-bread

Ingredients for 4 servings:
500gr veal sweet-bread
50gr butter
1 egg
1 small minced onion
1 lemon
Broth
Salt and pepper

Preparation:
Boil sweet-bread in hot and salted water, cook for a while than drain and wash with cold water.

Dry with paper towel and gently detach the external pellicle, than cut in dice.

In a medium pan, sear onion with butter, than pour sweet-bread.
Add salt and pepper and cook for few minutes. Pour on a serving plate and keep warm.

In the meantime beat egg yolk with lemon juice and one small deeper broth, pour this mixture in previous pan.

Let reduce using low heat, do not simmer.
As soon as sauce is ready, pour over sweet-bread and serve.
