Guazzetto of frogs

Ingredients for 4 servings:
500gr frogs’ legs 50gr butter Olive oil 1/2glass dry white wine 3 ripe tomatoes 1 big onion 2 celery stalks Flour Minced parsley and garlic Salt and pepper
Preparation:
In a medium bowl, sear butter and oil with sliced onion, sliced celery, parsley and garlic. Add frogs’ legs, sear well using high heat, pour wine.
Reduce wine, add peeled and diced tomatoes, flour, salt and pepper. Cook using medium heat for 20 minutes and serve immediately.
