Reggiana rabbit

Ingredients for 4 servings:
1,2kg rabbit 5tbs vinaigrette, 5tbs oil Minced rosemary Sage, garlic Some juniper barriers Salt and pepper
Preparation:
Wash the rabbit, dip it in a pan full of hot water and than in one full of cold water.
Dry well rabbit and dice it. Marinate rabbit with this mixture: oil, vinaigrette, minced herbs, mashed juniper barriers, salt and pepper.
From time to time turn dices to marinate well.
After a while pour all in a medium pan and cook covered for one hour using low heat. After one hour take cover off, raise heat and brown the meat. Serve when sauce is reduced.
