Ingredients for 6 servings:
1/2kg corn flour, coarse grain
300gr pork meat
300gr luganega sausage
300gr dry mushrooms
200gr grated parmesan cheese
150gr butter
Tomato sauce
Salt and pepper
Preparation:
Cook cornmeal porridge, cool over a marble surface and cut in 1cm thick slices.
Dip mushrooms in warm water for 20 minutes at least, wash and drain well.
Filter mushrooms water and set aside. Mince meat and sausage, in a medium pan sear them with 80gr butter, add mushrooms, few tomato sauce, salt and pepper.
Cook ragù sauce and from time to time pour mushrooms water, to dilute and flavour the sauce.
Grease an oven pan with butter, arrange cornmeal slices and alternate layers with ragù sauce and grated parmesan cheese.
Garnish with a last cornmeal layer with small pieces of butter and parmesan cheese. Bake in 180°C for about 30 minutes.
