Ingredients for 4 servings:
600gr beef meat
30gr butter
50gr minced bacon
1/2 glass red wine
A pinch fennel seeds, one clove garlic. Put all in a small netting bag
Corn flour
Salt and pepper
Preparation:
In a medium pan, better if an earthenware one, combine slam dices meat, bacon, butter, herbs bag, salt and pepper.
Stir well, cover the pan and cook for two hours using very low heat.
From time to time stir, if meat is too dry add some butter.
Some minutes before end of cooking remove herbs bag, pour wine and raise heat to evaporate wine.
Wine should not evaporate totally, reduce heat, cover the pan and end cook.
When wine is glutinous with the sauce, Brüscitt are ready to be serve.
In the meantime prepare a firm cornmeal porridge, serve sliced with Brüscitt.
