Ingredients:
1kg chicken
1 glass oil
flour
400gr tomatoes
1 glass dry white wine
200gr mushrooms
1 clove garlic
Parsley
Lemon juice
6 slices homemade bread
6 eggs
6 river shrimps (optional)
Broth
Salt and pepper
Preparation:
This is only one of many versions of same traditional recipe.
Clean well chicken, dice and flour.
Blanch tomatoes, peel and pit than dice.
Wash and clean mushrooms. Wash and dress river shrimps.
In the meantime in a medium pan, sear chicken with garlic and oil, pour wine and add tomatoes.
Cover the pan and cook for 10 minutes using medium heat.
Add mushrooms and cook for 15 minutes more.
Some minutes before end of cooking pour lemon juice and sprinkle with minced parsley and salt.
In the meantime, in a small pot cook shrimps and one glass white wine, sear for 5 minutes.
Toast bread slices, fry eggs with oil.
When chicken is ready, arrange it in a serving plate, wet it with cooking sauce and garnish with bread slices over which is a fried egg.
Garnish all with shrimps and serve.
