Caciucco alla Livornese (fish soup)

Ingredients for 6 servings:
500gr mix soup fish (scorpion fish, moorhen fish, mullet fish…)
500gr dogfish
500gr cuttle fish, octopus
500gr seafood (mussles, clams)
500gr shellfish (king prawns, scampi, prawns)
1 glass white wine
1dl oil
3 cloves garlic
sage and red hot pepper
500gr peeled tomatoes or tomato sauce
Toasted bread slices
Salt

Preparation:
In a big pan sear garlic, sage, pepper, all in oil.
Add all kind of fish, beginning from the cooking longest one:
Pour diced octopus, diced cuttle fish. Pour wine and reduce. Add diced tomato or tomato sauce.

Cook octopus or cuttle fish for 30 minutes, stir form time to time. Add other diced fishes.

Finally add prawns, scampi and cook all. At the end sauce should be almost liquid.
When octopus and cuttles are tender, add seafood with shells.
When shells open, turn off heat.

Serve caciucco over toasted and burshed with garlic bread slices.
