Mussels soup

Ingredients for 6 servings:
2kg mussels 500gr peeled tomatoes 3 cloves garlic, peeled and crushed Minced parsley 1 glass olive oil Handmade bread brushed with garlic Salt and pepper
Preparation:
Brush mussels and wash well. In a big pan brown 2 cloves garlic with all oil.
When garlic is brown remove it, add tomatoes –blanched and peeled, salt, pepper and parsley.
Reduce sauce, add mussels and cover the pan. Raise heat and let open mussels shells Some sea water will dilute and flour the sauce. Cook for some minutes more, add minced parsley.
Set soup aside for a while to sink eventual sand grains, serve with brushed with garlic toasted bread.
