Piemonte eel

Ingredients for 4 servings:
1kg eel 2tbs oil 30gr butter Vinaigrette Bay leaves One onion 1 clove garlic 1 hand parsley Flour Bread crumbs 1/2 glass dry white wine Salt and pepper
Preparation:
Dress accurately eel, cut it in 5cm pieces and marinate for 30 minutes with vinaigrette and bay.
In a medium pan brown oil and butter with minced onion, garlic, parsley. Flour ells pieces and add to herbs.
Brown well, pour some marinate sauce and add salt, pepper, pour wine. When sauce is reduced eel is ready to be served.
