Trout with mushrooms

Ingredients for 4 servings:
1kg trout 3 fresh mushrooms White flour Red wine 80gr butter Celery Parsley 1 carrot 2 onions 2 green onions Peppercorns Salt
Preparation:
Wash and dress well the trout. Mince mushrooms, parsley, one onion, green onions, mix well and add peppercorns and salt.
Combine with 40gr butter and with this mixture fill the trout.
Place trout in a fish pan and pour red wine till fish is covered. Add carrot, celery, onion in halves and salt.
Steam using low heat. When fish is ready peel it gently and arrange it on a serving plate.
In the meanwhile filter the cooking wine and pour it back in the fish pan, reduce it as one glass.
Add remaining butter previously beaten with one tablespoon flour. Cook for a while and pour sauce on trout, serve immediately.
