Ingredients for 4 servings:
1,2kg octopus
2 cloves garlic
1 glass olive oil
500gr peeled tomatoes
Minced parsley
100gr pitted black olives, better if from Gaeta
Washed salted capers
Salt and pepper
Preparation:
Wash and dress well octopus. In a big pan, better if an earthenware one, combine octopus, diced peeled tomatoes, mashed garlic, some salt and pepper. Cover and cook till octopus are tender and sauce is reduces, use low heat.
At half time of cooking add capers and olives. Sprinkle with parsley only at end of cooking.
Serve octopus with their sauce and garnished with toasted bread, previously brushed with garlic.
